This study was conducted to evaluate the effect of mulberry Chunggugjang administration on the generating and scavenging enzymes of oxygen free radical in streptozotocin (STZ)-induced diabetic rats. Six week old Sprague-Dawley male rats including normal control (NC) group fed normal diet, diabetic control (DC) group fed normal diet and diabetic group fed mulberry Chunggugjang powder diet (DMC) were used for 8 weeks. Diabetes was induced by single intraperitoneal injection of STZ with a dose of 50 ㎎/㎏ body weight. Food intake and water intake in diabetic groups were twice and 11 times higher than the normal group. Food efficiency ratio was remarkably low in diabetic groups and that was higher in the DMC group compared to the DC group. Relative organ weights of liver, kidney and heart in diabetic groups were significantly higher (P < 0.001) than the NC group. The serum glucose level in the DMC group was significantly (P < 0.01) lower than the DC group. The kidney superoxide dismutase activity in the DMC group was significantly (P < 0.01) lower than the DC group. The kidney catalase activity in the DMC group was lower than the DC group as an average of 31%. The kidney glutathione S-transferase activity in the DMC group was significantly (P < 0.001) lower than the DC group. The kidney xanthine oxidase activity in the DMC group was significantly (P < 0.01) lower than the DC group. In conclusion, these results indicated that mulberry Chunggugjang powder prevents losing weight caused by the diabetes and may have favorable effects on antioxidative enzyme system.
