This study is intended to suggest a more effective operation plan for customer value-orientation towards physical environments by understanding the direct relation between physical environment and behavior intention as related to customer value and behavior intention. In addition, the influence of physical environment on customer value for customers who visit Korean buffet restaurants in Busan is investigated. SPSS 20.0 was used to verify the hypotheses through frequency analysis, reliability, factor analysis, and regression analysis. First, spatiality, attractiveness, and cleanliness significantly affected customer value; on the contrary amenity did not, so Hypothesis 1 was accepted partly. Second, a significant influence of customer value on behavior intention was found, so Hypothesis 2 was accepted. Third, behavior intention was affected by physical environment, and the influence of amenity, attractiveness, and cleanliness was significant statistically; however, spatiality was not, so Hypothesis 3 was accepted partly.

본 연구는 부산지역의 한식뷔페레스토랑 이용고객을 대상으로 물리적 환경이 고객가치에 유의한 영향을 미치는지와 고객가치와 행동의도와의 관계 그리고 물리적 환경과 행동의도와의 직접적인 영향관계를 파악하여 향후 물리적 환경에 기반을 갖추고 고객가치 중심의 효율적인 운영관리 방안을 시사점으로 제시하고자 하였다. 자료처리는 SPSS WIN Version 20.0통계패키지 프로그램을 사용하여 빈도분석, 신뢰도분석, 요인분석, 회귀분석을 통하여 검증하였다. 가설검증결과 첫째, 물리적 환경 중 공간성, 매력성, 청결성은 고객가치에 유의한 영향을 미치는 것으로 나타났으나, 쾌적성은 통계적으로 유의하지 않은 것으로 나타나 가설 1은 부분채택 되었다. 한식 뷔페레스토랑을 이용할 때 고객들은 물리적 환경인 공간성, 매력성, 청결성 등은 고객가치에 많은 영향을 미치고 있다고 볼 수 있다. 둘째, 고객가치는 행동의도에 유의한 영향을 미치는 것으로 나타나 가설 2는 채택되었다. 고객가치의 중요성은 한식뷔페레스토랑을 이용하는 고객들로 하여금 행동의도로 이어진다고 볼 수 있으므로 고객가치의 창출과 고객중심의 차별화된 마케팅전략 및 실행이 필요할 것이라 생각된다. 셋째, 물리적 환경이 행동의도에 유의한 영향을 미치는 정도는 쾌적성, 매력성, 청결성은 통계적으로 유의한 것으로 나타났으나 공간성은 통계적으로 유의하지 않은 것으로 나타나 가설 3은 부분채택 되었다. 물리적 환경 중 매력성과 쾌적성, 청결성이 높을수록 행동의도가 높아지는 것을 알 수 있다. 따라서 고객들의 가치향상을 위해 쾌적한 물리적 환경을 제공할 수 있도록 고객들이 불편해하는 환경적인 부분을 보완하고 변화와 노력을 통하여 고객들의 요구수준 향상과 부합을 통해 물리적 환경을 조성하고 차별화 한다면 행동의도에 영향을 미치게 하는 결정적인 요인이 될 것이라 생각되며 이는 곧 이윤추구라는 경영 운영으로 연결될 수 있을 것이라 생각된다.
