The growth characteristics of Salmonella enterica serovar Typhimurium (S. Typhimurium) were evaluate for development of a polynomial model to predict the growth rates and lag time of S. Typhimurium in Kimbab as a function of temperature (5, 10, 20, 30, and $40^{\circ}C$). In all experimental variables, the primary growth curves fit well ($r^2=0.9071$ to 0.9998). The predicted growth rates of S. Typhimurium generally decreased at lower temperature ($10^{\circ}C$) and increased at high temperature (30, $40^{\circ}C$). In addition, the predicted lag times of S. Typhimurium generally decreased at high temperature (30, $40^{\circ}C$) and increased at low temperature ($10^{\circ}C$). Results showed the polynomial model developed in the present study is an appropriate secondary model for determing growth rates and lag time on the basis of the correlation of coefficient ($r^2=0.9688$ for specific growth rate (SGR), 0.9369 for lag time (LT)), coefficient of determination ($r^2=0.9138$ for SGR, 0.8901 for LT), mean square error (mean square error (MSE)=0.0003 for SGR, 0.0417 for LT), bias factor ($B_f=0.9936$ for SGR, 0.8126 for LT) and accuracy factor ($A_f=1.0741$ for SGR, 1.2834 for LT). Therefore, this secondary model was shown to reliably predict the maximum growth rates and lag times for S. Typhimurium in Kimbab.
