White rice (Oryza sativa L.) is the main food material worldwide. White rice originated from different geographical sources will contain different nutrition components. This study aims to explore the markers to discriminate In this study, we analyzed 80 commercial white rice samples collected from various domestic markets around Korea and China. Samples were extracted and analyzed with LC-MS and GC-MS. Multivariate statistical analyses were employed to discover the geographical specific signature of white rice. As a result, sugar, sugar alcohol, and fatty acids were recorded as potential discriminating markers by a significant difference in GC-MS analysis.
