Since COVID-19, Food security has emerged and the international community’s participation in carbon neutrality is expanding, so it is necessary to establish a system that can produce seafood while protecting the environment. Food tech, which combines food and technology, is attracting attention as a future food in order to protect resources and the environment. The global food tech market is expected to grow form 23 trillion won in 2020 to 30 trillion won in 2025. Major developed countries is fostering the food tech industry. Meat analogue, which are in the spotlight as alternative food, can be classified into new stages(insects, seaweed), immature stages(rice, corn, potatoes) and maturation stages(beans, wheat, mushrooms).
