Chestnut has been attracting attention as an alternative to wheat for gluten-free diets. Chestnut shell (CNS) has potential as a raw material for biorefinery because it contains cellulose, hemicellulose, and lignin. In this study, in order to improve enzymatic digestibility (ED) of CNS, pretreatment conditions were optimized using response surface methodology.
