As food waste emerges as one of the most urgent environmental issues globally, upcycled food is gaining attention as an effective solution. Upcycled food is a sustainable food solution that reduces food waste and promotes a circular economy through a virtuous cycle of food ingredients by transforming discarded food and by-products into high value-added products. This study aims to identify trends in upcycled food research through bibliometric analysis, explore necessary future research areas and new research opportunities, and contribute to the sustainable development of upcycled food and environmental issues. To this end, the relationships between core keywords and major research topics in upcycled food studies were visualized using VOSviewer, based on bibliographic information from research articles collected from the Web of Science database, providing an intuitive overview of research trends. As a result, food waste, behavior, sustainability, circular economy were identified as core keywords in upcycled food research. Cluster analysis, which grouped closely related keywords, revealed a total of three clusters centered around upcycled food, behavior, sustainability. The findings of this study are expected to serve as valuable foundational data for raising awareness of upcycled food, setting future research directions, and supporting the realization of a circular economy through resource reuse.
