Natural materials with antibacterial activity to the Streptococcus mutans KCCNM 40105 strain were selected, and efficient extraction conditions were confirmed. In addition, the activity substance was stable under various treatment conditions. Of the 10 food material groups, Prunus mume fruit the only material that showed antibacterial activity against S. mutans strains. The clear zone of the various extraction solvents was 18.66 mm in the ethanol extract and 20.18 mm in the water extract. Measurements of the antibacterial activity according to the mixing ratio of the two solvents revealed the 30% ethanol extract to have the highest antibacterial activity. Measurements of the minimum inhibitory concentration revealed activity at 3.0 mg/mL. The stability to heat was confirmed, but the extract was not active at pH 6.0 or higher. The antimicrobial activity of the 30% ethanol extract of Prunus mume treated with enzymes was the same with 10 mg/kg and 100 mg/kg of the nine enzymes. On the other hand, the activity tended to decrease slightly in the 1,000 mg/kg concentration treatment group. The activity of the catazyme enzyme and hydrogen peroxide treatment increased slightly at 10 mg/kg. in contrast, the activity decreased after the treatment with 100 mg/kg. Furthermore, the storage temperature and period of the extract, freeze-dried powder, and hot air-dried powder did not affect the antibacterial activity.
