Honey production in Korea has increased significantly for the last few decades. Enforcement of the high standard for honey quality and its control would increase the public awareness of pure domestic honey. This study evaluated the quality of honey from different nectar origins of 2014. Among 3796 samples, 78.7% were acacia honey, 2.6% chestnut, and 18.7% were multifloral honey. 70% of acacia honey showed moisture contents higher than 20%. Inverted sugar content was highest in acacia honey. Fructose was 38~41% whereas glucose was 24~29% with higher F/G ratio from chestnut honey. Most honey samples showed lower (4~9㎎/㎏) HMF contents but some showed extreme high values above 200㎎/㎏. Stable carbon isotope ratio showed clear two peaks of frequency around -12 and -24 which indicates the possible adulteration of other carbohydrates from C4 plants. Sample above -22 ‰ was 6.7% of acacia honey, and 9.95% of multifloral honey. Continuous quality assessment and control is the vital element for the sustainable development of beekeeping industry.
