This study tracked the contemporaneous efficiency of food & beverage (F&B) outlets in L-hotel from 2014 to 2016 using the data envelopment analysis. Additionally, this study employed bootstrap truncated regression to analyze the relationship between F&B operational policies and F&B outlets’ efficiency. The major aspects of this study are as follows: First, deli and buffet outlets have the highest efficiency, whereas French and Italian restaurants are the least efficient. Nonetheless, buffets still have room to improve scale inefficiency. Moreover, the inefficiency of most of F&B outlets is mainly caused by the shortage of outlet sales, rather than the number of customers. This result demonstrated that these outlets need strategic alternatives to maximize the sales volume. Second, the sales per unit area and turnover ratio per seats in F&B outlets have positive effects on the annual efficiency score of F&B outlets, indicating a need for improving efficiency by adjusting resource allocation and food-service capacity. This study suggests strategic operational plans to cope with the fluctuations in the internal and external environment and identify best practices F&B outlets that others can emulate. Furthermore, the results of this study may help F&B practitioners to understand the F&B outlets environment from an operator’s perspective, and to offer strategic initiatives for efficient operation management.
