The natural antimicrobial molded fiber package (MFP) was prepared by applying the rice hull acidic liquor to it and analyzed the effect of the treatment of the liquor on the quality change of eggs packed with it during storage. The changes in physical properties and the appearance of eggs were evaluated under various storage conditions. The sensory changes of eggs such as shape, spreadability, odor and acceptability during storage period were examined under different storage temperatures. The mixing and spraying methods for applying the liquor to the MFP were compared each other. The results showed that the rice hull acidic liquor treatment inhibited the increase of the total number of bacteria of eggs. Sensory qualities were decreased with increased the storage temperature and time. As the storage period and the temperature increased, the specific gravity of eggs decreased more rapidly. The quality of the treatments was more stable during storage compared to the control. After 20 days of storage, there was no difference between the control and treatment, the mixing and spraying method. The sensory evaluation showed that the off odor and weight loss of eggs were improved by the storage in the rice hull acidic liquor added natural MFP. The degree of acceptability decreased with increased storage period and time and the overall evaluation of the rest of the treatments was higher than that of the control except the spray treatment. As a result, the MFP treated with the rice hull acidic liquor was effective to delay the quality degradation of eggs during storage.
