The purpose of this study is to analyze food truck selection attributes and food truck satisfaction. In addition, we try to grasp the moderating effects of gender on the relationship between optional attributes and satisfaction. The survey was collected through a self-administrated questionnaire for food truck users. The survey period was from July 3<SUP>rd</SUP> to August 3<SUP>rd</SUP>, 2018. A total of 221 questionnaires were distributed and 199 of them were used in this study. Eleven selection attributes were factor analyzed resulting in four factors: service, cleanliness, food quality, convenience. Multiple regression analysis showed that all four factors had a significant effect on satisfaction. Food quality was found to have the highest impact on satisfaction, followed by service, convenience and cleanliness. A hierarchical regression was performed to verify the mediating role of gender on the relationship between selection attributes and customer satisfaction. This analysis shows that the effect of cleanliness on customer satisfaction is significantly controlled by gender.
