The purpose of this study is to identify what drives supply chain level sustainable performances across the flight catering supply chain. A series of semi-structured in-depth interviews with twenty-three respondents from airlines, caterers, food- and nonfood-suppliers and logistics companies was conducted, investigating drivers of environmentally and socially sustainable performances being implemented across the flight catering supply chain. Findings are as follows. First, supply chain dynamics drive sustainable performance, whereby companies along the flight catering supply chain have a variety of relationships enabling them to be integrated to some extent (i.e., integrated supply chain). Supply chain dynamics may include diverse collaborations between different stakeholders, integration/consolidation of logistics, and communication, where there are mutual interactions. Second, government legislation/auditing was another important issue with regard to social performance, whereas geographic location placed an influence on the implementation of sustainable performances. Third, cost reduction was found to drive sustainable performance, particularly environmental, whereas the high cost of sustainable products has placed a negative influence on the adoption of product-based green supply. However, companies need to recognize a need to pay the cost incurred for sustainable performance.
