산업화의 사회형태는 생태환경과 생활방식 모두에 어느 정도의 지속가능한 발전과 관련된 문제가 출현하게 하였다. 물질적 조건의 대폭 향상은 서로 다른 사회적 배경과 생활방식, 가치관을 가진 사람들이 점차 자신의 내적 수요에 주목하게 되면서, 음식문화와 관련한 건강, 생태 등 여러 방면의 지속가능한 혁신에도 더 많은 요구가 생성되었다. 본 연구는 지속 가능한 발전을 음식문화의 주요한 혁신 방향으로 삼았다. 또한 지속 가능한 특징을 가진 두부를 구체적인 음식문화의 연구대상으로 삼고, 두부 문화에 대한 지속가능성, 음식생활 형태, 지속가능한 혁신 조건 및 경계선을 새롭게 할 데 대한 논의를 전개하고자 한다. 본 논문은 지식 도보의 사건 맥락（知识图谱的事件脉络）의 분석방법을 사용하여 시간적 순서에 따라 음식문화 관련 생활 방식과 전형적인 식기, 대표적 식품의 변화 및 관련 가치와 의미, 영향요소 등을 분석하고, 또 음식문화 중 두부문화에 초점을 맞추어 서로 다른 지역의 두부문화 사례의 특징에 대해 연구하는 방법을 통해 지속가능한 관점에서 두부 문화의 혁신적 요소 및 관련 생활형태를 분석한다. 또한 지속가능한 시각에서 두부문화 혁신의 조건 및 경계선의 확장에 대한 연구를 진행하고, 최종적으로 두부문화에 기초하여 식품 문화 발전 혁신의 가능성에 대해 논의한다.
본 논문의 구체적인 연구결과 및 내용은 다음과 같다. 첫째, 중국 음식문화의 발전과 변화에 대한 거시적 연구를 수행하고 지속 가능한 배경에서 음식의 혁신 추세를 분석하였다. 둘째, 두부 문화의 각도에서 음식 문화를 연구하며, 중국 음식 문화 기반에서 두부문화의 지속 가능성 특징을 정리하였다. 셋째, 두부문화와 관련된 생활 형태에 대한 연구를 통해 두부문화의 혁신을 분석하는 것은 ‘기존 인지와 미래 발전’에서 출로를 찾는 방법이다. 넷째, 두부 문화의 지속 가능한 혁신조건 및 혁신경계를 확장하는 연구를 통해, 음식 혁신이 사회 발전의 중요한 방식 중 하나로 확립되고 있는 것을 확인하였다. 본 논문은 이러한 연구결과를 바탕으로 미래의 두부 및 관련 음식문화의 지속 가능한 혁신을 위한 이론적 기초를 구축할 것을 기대한다.

Industrialized social patterns have led to more or less sustainable development problems in the ecological environment and lifestyles, etc. At the same time, with the substantial increase in material conditions, people in different social backgrounds, lifestyles and values have begun to pay attention to their own inner needs. There are also more demands for sustainable innovations in health, ecology and other aspects related to food culture. This study takes the concept of sustainable development as the main direction of food culture innovation, and takes tofu, which has sustainable characteristics, as a specific food culture research object, and explores the sustainable characteristics of tofu culture, the related food and life forms, the conditions for sustainable innovation and the boundaries of innovation. This paper adopts the method of event lineage analysis based on food culture knowledge mapping to analyze the changes in food culture-related lifestyles, typical food utensils, representative foods, as well as the related value and significance and influencing factors through chronological order, and at the same time, focuses on the tofu culture in the food culture, and analyzes the innovation factors of the tofu culture and the related lifestyles through the characterization research method of the tofu culture cases in different geographical regions, analyzes the innovation factors and related lifestyles of the tofu culture from the perspective of sustainability, and researches on the conditions for the innovation of the tofu culture under the threshold of sustainability and the boundary expansion, and at last, explores the possibilities of the development of innovation of the food culture and the related innovative value and significance based on the tofu culture.
The specific findings and contents of this paper are as follows. First, a macro study on the development and change of Chinese food culture is conducted to analyze the innovation trend of food in the context of sustainability. Second, the study of food culture from the perspective of tofu culture is conducted to sort out the sustainability characteristics of tofu culture based on Chinese food culture. Thirdly, through the study of life forms related to tofu culture, we analyze how tofu culture innovation is a way to find a way out of "established knowledge and future development". Fourth, the study of the conditions for sustainable innovation and the expansion of the boundaries of innovation in tofu culture identifies food innovation as one of the most important ways of social development. Based on these findings, this paper aims to build a theoretical foundation for sustainable innovation in tofu and related food cultures in the future.
