Quality changes of white lotus (Nelumbo nucifera Gaertn) cuts and slices were evaluated under the different storage temperatures (0, 5, 10 and 20℃) for 14 days. Flesh firmness, visual score and sensory value in both cuts and slices decreased with increasing storage temperatures, especially at 10 and 20℃. Hunter ‘L’ value gradually decreased with increasing storage temperatures, but there was no difference in Hunter ‘b’ value. Polyphenol oxidase (PPO) activity and browning potential (BP) were significantly increased at the end stage of storage and their activities were much lower at 0 and 5℃ than those at 10 and 20℃. Total phenolic contents slightly decreased with time and its content remained unchanged among treatments. Respiration rates and ethylene production increased at the middle stage of storage and were much lower at 0 and 5℃ than those at 10 and 20℃. In sliced lotus storage, roots stored at 0℃ extended shelf life by improving visual quality and decreasing respiration production.
