The application of the heat treatment method as one of various food processing technologies could contribute to the utilization of red beans. Microwave (MW) treatment is known to be a simple and efficient method, and to affect antioxidant properties of grains. The objective of this study was to characterize the food processing-related quality of red beans treated at different times of microwave. After microwave-treated, the a and b values decreased and the moisture content also decreased from 13.9 to 10.8%.
