Optimal subcritical water extraction (SWE) conditions for improving the physiological activity of the Citrus sunki Hort Tanaka peel (CP) were obtained by response surface methodology (RSM), Dependent variables of SWE for CP were DPPH radical scavenging activity, alcohol dehydrogenase (ADH) activity, acetaldehyde dehydrogenase activity (ALDH) activity, and nitrate scavenging activity (NSA).
