This study was conducted in order to evaluate physiological activity, such as antioxidant, antibacterial, anti inflammatory, and digestive enzyme activity of Lentinus edodes water extract (LWE). The SC50 of DPPH and ABTS radical scavenging, SOD-like activities of LWE were 6.15±0.06 mg/mL, 8.67±0.05 mg/mL, and 21.25±0.47 mg/ mL; total polyphenol and total flavonoid contents were 63.07±0.13 mgGAE/g, 38.1±0.05 mgQE/g, respectively. The performance of 400 μg/mL of LWE showed more than 52.1±0.6% protective effects against oxidative stress in HepG2 cell lines. Antibacterial activity increased as the dose concentration of LWE increased, and the MIC was 50 mg/mL for L. monocytogenes, S. typhimurium, and 125 mg/mL for H. pylori. No cytotoxicity was observed for LWE in RAW 264.7 cells and Caco-2 cells, and production of NO was inhibited in a concentration dependent manner. Production of NO was reduced by 65.9±2.1% in RAW 264.7 cells and 70.4±4.6% in Caco-2 cells. Similarly, the production of inflammatory cytokines (TNF-α, IL-1β and IL-6) was inhibited in a concentration dependent manner. In addition, amylase and protease enzyme activity was observed in LWE and increased enzyme activity was observed according to the concentration of the extract. The results indicate that Lentinus edodes could be used as a functional cosmetic and as material for enhancement of inner beauty.
