This study investigated the effect of raw soybean yellow(RSY) and raw soybean black(RSB) on body weights, pancreas weights, serum glucose and lipid concentrations of both normal and diabetic male rats(Sprague-Dawley, body weight 338.8±19.2g). For each experimental, some rats were injected with streptozotocin intraperitoneaI(i.p.) to induce diabets, and other rats were injected with buffer i.p. as a control group. Body weight gain(BWG) was lower in rats fed both RSY and RSB diet(3.4~5.0g BWG) than in those fed control diet(58.1g BWG). The diabetic rats showed significant decrease of body weight (-50~-67g) compared with the control rats. RSY and RSB feeding resulted in greater pancreatic weight relative to body weight, and diabetic rats fed RSY and RSB had heavier pancreatic weights relative to body weight than control rats. The levels of fasting serum glucose in diabetic rats fed both RSY and RSB decreased by 42 and 31%, respectively, compared with the diabetic control rats, but they increased by 80 and 110% compared with the normal control rats. The concentrations of total lipid, triglyceride, phospholipid and total cholesterol in serum of diabetic rats fed RSB diet were lower than those in control rats, but serum HDL-cholesterol, HDL-cholesterol/total cholesterol ratio were not affected by raw soybeans feeding. Atherogenic index was lower in diabetic rats fed RSY and RSB diet than those in control rats. The concentrations of total lipid, triglyceride and phospholipid in liver were lower in raw soybean groups or diabetic raw soybean groups than those in control group. The concentrations of cholesterol in liver of groups treated raw soybean were decreased compared with the control group.

생콩이 정상쥐와 당뇨쥐의 혈당과 지질 농도에 미치는 영향을 조사하고자, 평균 체중 338.4g의 숫쥐를 대조군, 생콩군, 검정 생콩군, 당뇨대조군, 당뇨노란 생콩군 및 당뇨검정 생콩군 등 6군으로 나누어 해당식이로 4주간 사육하였다. 당뇨병 유발은 0.01M citrate buffer(pH 4.5)에 용해시킨 streptozotocin을 1회(50㎎/㎏ body weight) 복강내 주사하고, 1주일 후 2회(40㎎/㎏ body weight) 복강내 주사하였다. 체중 변화는 대조군은 60.1g 증가하였으나, 50% 노란 생콩 및 검정 생콩군은 각각 3.4 및 5.0g 증가로 생콩이 흰쥐의 체중 증가를 억제한 것으로 나타났다. 모든 당뇨유발군은 당뇨병으로 인한 대사장해로 50.5~67.3g 감소되었다. 췌장 무게는 대조군 및 당뇨대조군에 비하여 생콩군이 유의하게 증가하였음은 생콩중 trypsin inhibitor나 항영양소인자에 영향을 받는 것으로 나타났으며, 또한 생콩군에 비하여 당뇨생콩군이 유의하게 증가되었다. 이러한 현상은 streptozotocin 투여로 가중된 것으로 생각된다. 혈당량은 당뇨대조군에 비하여 당뇨노란 생콩군 및 당뇨검정 생콩군이 각각 41% 및 31%씩 유의하게 감소되었으나, 정상대조군에 비하여는 당뇨노란 생콩군 및 당뇨검정 생콩군이 각각 80% 및 110% 증가되어 정상수준으로 혈당을 낮추지는 못하였다. 혈청의 중성지질, 인지질 및 총 콜레스테롤 농도는 당뇨노란 생콩군은 당뇨대조군에 비하여 유의하게 감소되어 정상대조군과 비슷한 경향으로 혈청의 지질 농도는 정상수준으로 개선되었으며, 당뇨검정 생콩군은 대조군에 비하여 유의하게 낮은 농도를 보였다. 혈청중 HDL-콜레스테롤 농도는 대조군과 당뇨생콩군들이 비슷한 수준을 보였다. 동맥경화지수는 대조군에 비하여 당뇨생콩군들이 유의하게 낮았다. 간의 총 지질과 중성지질 농도는 대조군에 비하여 각 당뇨군이 유의하게 감소되었으며, 특히 당뇨검정 생콩군이 가장 낮은 농도를 보였다. 인지질 농도는 대조군과 당뇨대조군에 비하여 당뇨생콩군과 당뇨검정 생콩군이 유의하게 감소되었다. 그리고 간의 총 콜레스테롤 농도는 대조군에 비하여 생콩군들과 당뇨검정 생콩군이 낮은 농도를 보였다. 이상의 결과로 보아 생콩이 당뇨쥐의 혈당을 다소 낮추는 작용이 있고, 혈청 지질대사의 개선효과 등 부분적인 개선효과가 있는 것으로 나타났다. 생콩 중 항영양소인자에 의여 체중 증가가 억제되고 또한 췌장의 비대를 초래하므로 생콩의 섭취수준이나 섭취기간 등 많은 연구가 이루어져야 할 것으로 생각된다.
