The purpose of this study was to develop stock using edible insects and to analysis with physicochemical characterization attribute difference and sensory characterization. The salinity, soluble solids content, pH, viscosity, color, attribute difference, and overall acceptance were studied to compare the stock using edible insects of 5 type(Allomyrina dichotoma L., Oxya chinensis sinuosa, Gryllus bimaculatus De Gee, Protaetia brevitarsis L., Tenebrio molitor L..). The results are as follows. The salinity, soluble solids content and pH of the Protaetia brevitarsis L. stock were significantly highest of edible insects of 5 type. There was no significant difference in the viscosity of the stock depending on the type of edible insect. The whiteness showed the darkest value for Tenebrio molitor L. stock, the redness showed the highest value for Protaetia brevitarsis L. stock, and the yellowness had the highest value for Oxya chinensis sinuosa stock. According to the results of the inspection on the attribute difference of the stock prepared by different types of edible insects, Protaetia brevitarsis L. stock had the highest color intensity, and Oxya chinensis sinuosa stock was the strongest in browness. The savory odor was the strongest in Allomyrina dichotoma L. stock, and the greasy taste showed no significant difference between the samples. Tenebrio molitor L. stock showed the strongest in all items of attribute difference except those above. The results of the sensory test, the appearance of the stock Oxya chinensis sinuosa was the highest, and the texture did not show any significant difference between the samples. The highest level of Tenebrio molitor L. stock was shown in the flavor, taste, aftertaste and overall acceptance. In the study of stock by edible insects type, Tenebrio molitor L. stock is considered the best.
