ABSTRACT The open kitchen’s strengths are modern kitchen system, providing interests and friendliness by directly showing the cooking process, more credential in hygienic aspect, and faster serving. However, the design and changes of open kitchens were caused by customers’ needs rather than employees’ needs. Therefore, this study was conducted at the focus of cooking employees, not that of customers. A survey was conducted on 300 cooking employees, who were working at open kitchens of 10 first class hotels in Seoul. Valid 274 copies of survey were analyzed. SPSS 18.0 statistical package was used to analyze the data. The results of this study can be summarized as followings. First, service efficiency did not influence the job satisfaction. Second, job satisfaction was shown to have a significant effect on job commitment, which agreed with previous study results. It showed that job satisfaction of a cook made a cook commit to cook, which consequently offer high quality service to satisfy customers.
