Immature Citrus unshiu is a good source of polyphenol and flavonoid supplements like hesperidin compared to mature citrus fruit. However, hesperidin which is contained in large amounts in citrus fruits has been known to have low water solubility, so increasing the water solubility is expected to improve the bioavailability and process quality. The objective of this study was to optimize the spray drying (SD) process for microencapsulation of immature Citrus unshiu concentrate (ICUC) using response surface methodology (RSM).
