Sterilization is a crucial process for the safety of food products to keep their quality properties. This study investigated the effect of sterilization temperature (60, 65, 70, and 75℃ for 30 minutes) on the microbiological analysis, physicochemical characteristics, and in vitro antioxidant activities of four different cold brew teas (green tea, rooibos tea, rosemary tea, and hibiscus tea). In the microbiological assay, the count values of aerobic bacteria decreased in all sterilized cold brew teas (0-32 cfu/mL) compared with unsterilized teas (>1,700 cfu/mL).
