The phase transitions behaviors in starch-water system at high moisture level, starch molecular structure and morphological properties were investigated to evaluate the quality of cooked rice. Rice starches isolated from Korean cultivars with different amylose contents and cooked rice made with different cooking methods were stored at 4℃ for 14 days. Apparent amylose content of rice starch was the highest in Dodam starch (44.8%) and lowest in Dongjinchal starch (1.5%). The Dodam starch with the highest average chain length of amylopectin (26.1), the highest proportion (24.3%) of long chain (DP≥37), and the lowest proportion (17.5%) of short chains (DP 6∼12) displayed the highest gelatinization and retrogradation temperature. The enthalpies of ice freezing and melting, and glass transition temperature (T<SUB>g</SUB>′) of rice starches increased with increasing amylose content. After a week of storage at 4℃, thermal properties (enthalpy and T<SUB>g</SUB>′) of rice starches were decreased due to the starch recrystallization in starch-water system at high moisture level. Amylose content of the rice starch was positively correlated to ice freezing enthalpy, T<SUB>g</SUB>′, ice melting enthalpy, and retrogradation enthalpy. The ice melting temperature was positively correlated with long chains of amylopectin, whereas negatively correlated with short chains of amylopectin.
