Skate food is generally known to be the local food of Cholla Province. Both the production and consumption of the skate in the Cholla region are related to general image. It is said that if a feast is given without the skate food in Cholla Province, it can not be considered a real feast. To an extent the skate food is a symbol of the Cholla food tradition and regional identity.
In this paper, I examine the manners that people have consumed the skate food in Cholla province in the past. Also, I explore the ways in which the skate becomes an expensive cuisine and valuable gift food in the 1980s. Imports of the skate from various countries such China, Argentina, Uruguay, etc. beginning in the early 1990s have provided the opportunity for the common people to consume the skate food. While the consumption of the imported skate has become nationwide across the regional boundary, the image of the food as the Cholla local province persists.
Development of the marketing system and appropriation of the traditional fermenting skills, historical and public discourses by the marketers as well as the Cholla people's collective memory of the past foodways are all orchestrated to strengthen and maintain the image of the skate food as the local food. Culinary tourists who want to taste the local culture through tasting the authentic local food in the 'native place' is another factor making the fermented skate food a symbol of the region.
